Protein Date Balls {vegan & gluten free}

I love having sweet protein snacks on hand that I can grab whenever I need a quick bite to eat. These protein balls were SO easy and quick to make and only have a few ingredients! You can use a food processor or a blender to mix these babies up (I used a food processor). This recipe will make 10-12 balls depending on the size.

Ingredients:

3/4 cup soaked raw cashews (soak in water for 1-2 hours)

10 pitted medjool dates

1 tsp hemp seeds

1 tsp coconut oil

2 tsp cacao powder (if you want it to be more chocolatey, feel free to add more!)

1 tbsp maple syrup

1 serving of protein powder (for this recipe I used Nuzest Coconut Coffee MCT protein. The flavor of the balls will differ based on your protein powder flavor. If you use a chocolate protein, you might want to try it without the cacao and then you can add it if you want a stronger chocolate flavor).

*Optional: Shredded coconut


Method:

1. Put all the ingredients into the food processor and blend until everything is incorporated. It should be a little sticky.

2. Roll into balls. Once the ball is formed, roll it in the coconut.

3. Store in tupperware/air-tight container in the fridge.
