I just posted videos on Snapchat of the process to make this soup and a lot of people replied saying how good it looked! It was so easy and delicious so I thought I'd share it with you guys.
My mom and I were at Whole Foods and I didn't know what I wanted to eat for dinner (typical). But then I found some lentils and my mom gave me the idea to make a soup with them.
Here are all the ingredients you'll need:
Dried Lentils
Onions, Carrots, Celery
Zucchini
Vegetable Stock
Tomato Paste
Pasta
Kale or Spinach
Steps:
1. Sauté the onions, carrots and celery until the onions are brown and caramelized
2. Add the zucchini, lentils, tomato paste and vegetable broth
3. Bring to a boil and then simmer, covered, for about 25 minutes
4. Add the pasta and kale and cook until the pasta is tender (about 10 more minutes)
...That's it!
Tips:
~If you can, try to get sprouted lentils. They are easier to digest!
~You can also get the onions, carrots and celery already chopped which makes it super easy :)
~Get a vegetable stock with as little sodium as possible
~You can use any kind of pasta. For extra protein you can use chickpea pasta or ProteinPlus pasta.
~To feel extra good about yourself, add a handful of kale or spinach for extra greens
~Lastly, there are no exact amounts for this recipe because it just depends on how much you want to make and its pretty easy to eyeball it
